Pedro has been a coffee producer for 30 years, and has been working hard to produce a good quality of crop, rather than focusing on producing a higher quantity as many producers had previously been focused on.
Las Peñas is the name Pedro landed on for his farm, due to the very large limestone
rocks that form part of his plot, literally translating to 'The Rocks'.
Once the ripest cherries on Pedro’s farm are picked, they are immediately transported to the depulper. After the flesh of the coffee cherries has been removed, the coffee goes into the fermentation tank to be dry fermented for 32 hours. This process is more sustainable as it saves the use of water. It then rests in a tank of clean water for 12 hours.
The coffee is then evenly dried in the direct sun for 6 hours per day, for a period of 6 days. Pedro makes sure that the coffee dries evenly by only having it dry in the sun from 9 in the morning until 2 in the afternoon.
