Wilder Lazo is one of the most innovative and sought after coffee producers in the coffee industry, known for producing incredibly high quality coffee. I remember drinking one of Wilder's coffees, a Lemon Gesha, back in 2022, and have chased that same 'Wow' moment ever since. This is definitely one of those coffees that will stay with you - a truly unique and memorable coffee.

Wilder Lazo

Wilder Lazo's family is made up of a group of passionate coffee producers, they are based in San Adolfo (Huila). Wilder Lazo transformed his San Adolfo farm into a beacon of coffee excellence after pivoting from cattle genetics. Following a devastating fire, he and his family rebuilt Finca Bella Alejandría (1,600–1,800 MASL) with renewed purpose, now pioneering varietal innovation and meticulous processing. Their hands-on approach—from seed to cup—reflects an unwavering commitment to quality and sustainability.

This coffee was produced at Wilder Lazo's farm: Bella Alejandría farm in Huila, Colombia.

Natural, 200 hours fermentation

Harvesting and cherry selection (95% ripe, 5% semi-ripe) involves five main steps, starting with the drying process. Phase 1 of the drying process involves Individual cherry drying (grain-by-grain) in the greenhouse (marquesina) for the first 5 days to accelerate initial dehydration at a maximum temperature of 35°C. Phase 2 - low and controlled drying for approximately 20 additional days at a maximum temperature of 28 °C to preserve the genetic profile and aromatic complexity of the variety. Packaging in Grain-Pro bags and stabilisation for 15 days to allow moisture homogenisation. Hulling and manual sorting according to export quality standards. Final packaging: vacuum packed in 24 kg boxes to preserve freshness, structural integrity, and cup stability during export.
