Martha and her two sons, Elias and Shady started to work with experimental coffee in a way that they could create and pass through the technology that would help to improve the quality of life of the families that work together with them in their project El Vergel State.
In May this year we were lucky enough to hang out with Shady both in Glasgow overa 'pizza crunch' and at our roastery where were learnt more about El Vergel and the Forest Green mission.
E.A. decaffeinating, also known as Sugarcane Ethyl Acetate (E.A.), begins with fermenting sugar cane molasses to create ethanol, then combining it with acetic acid to form ethyl acetate. Received beans undergo a water and steam conditioning to increase moisture and expand cells, allowing caffeine to be successfully extracted with an E.A. wash. Beans are then scoured with water and steam to access their interiors before being dried to pre-process levels.
We have been enjoying notes of Toffee, Milk Chocolate and Raspberry Compote.
