Edwin Ever Sabillon currently cultivates the coffee at his farm, El Plan, with just one other permanent employee. This grows to a dozen during harvest when they handpick the cherries. Alongside the Parainema varietals, they grow banana trees which offer their coffee shade from the hot sun.

During his youth, Edwin had always worked with coffee. As a second-generation coffee farmer, he was able to work alongside his father on his farms where he soaked up all of his passion and expertise.

When he started his own plot, he suffered from a lot of bad luck. During his fourth harvest, there was an extreme attack of a disease called Roya which attacks the coffee plants and caused him to lose all of his crops. After this, a neighbour recommended him the more resilient varietal called Parainema. That same neighbour won the Cup of Excellence Competition with the same plant type in 2015 and so that same year he planted his first hectare of this coffee.
