Los Nogales - El Salvador
Los Nogales is in the western Santa Ana department of El Salvador. Our importer partner, DR Wakefield, have been supporting experiments with JASAL (owned by the Salaverria Family) for a number of years through their 'Los Nogales Project', where they have exclusive access to the coffee from the first farm that the Salaverria family ever bought.
This was the highest priced lot available to us and we were so excited to immerse ourselves in its unusual processing method - 80 hour fermentation in sealed tanks, depulped, and then submerged under clean water in a soaking tank for 10 hours.
You can expect sweet and boozy notes ofChocolate Liqueur, Plum, Cherry, Blackberries, and Vanilla. We comment that it was kind of like an entire box of chocolates with the Strawberry Creme and Whisky Fondant included.
