Popayán is located in the department of Cauca at 1700 masl where the topography is perfect to grow exceptional coffee. The 67 farms that combine to create the coffees for the Popayán Partner Program are sheltered by the dramatic Andes Mountain Range.

The decaffeination process is unique, using sugarcane and water to extract the caffeine, while enhancing its natural sweetness. To start the coffee is steamed before being submerged in spring water. As soon as the coffee is saturated, it is sent to an extraction machine which places it in direct contact with sugarcane ethylacetate for eight hours to dissolve the caffeine.

This coffee really reminds us of Honeycomb, Oatmeal Breakfast Bars and Milk Chocolate and is really well suited for milk.

To make sure you always get the freshest coffee, we roast and ship twice a week; on Mondays and Thursdays. This means you'll always have coffee shipped to you within a week of being roasted.

Order before midday on Monday for shipping same day. Orders after that ship on Thursday.
