Rugali - Rwanda
We sourced this coffee from our friends at Raw Material, who in turn worked alongside Muraho Trading Co. in Rwanda. The main goal with this partnership is to help co-operatives such as the Rugali Coffee Washing Station increase their quality of production and subsequently fetch a higher price for their coffee.
This is the first time we have encountered an Anoxic Washed coffee, and we are loving the more complex flavour potential in the coffee. The processing method involves placing cherries in fermentation tanks and placing a sheet over before submerging with cool water. This creates a vacuum effort on the coffee, creating an anoxic (oxygenless) environment for fermentation to begin.
The result is a moreish, sweet Rwandan coffee with notes of Crisp Red Apple, Strawberry and Honey.
