ABOUT THE FARM

Telila by Telila Washing Station

Origin - Limu/Djimma Border, Ethiopia

Process - Washed

Varietal - JARC 74110, JARC 74112, Local Landraces

Altitude - 1900-2150 masl

 

We are so excited about having a washed Ethiopian coffee in our ranks, with all of the properties you’d expect from this origin. Juicy? Yes. Florals? Some. Peach? Tons!

Telila Washing Station receives cherry from coffee-producing communities across Gera which lies within Limu, Djimma in Western Ethiopia. The region shares many characteristics with the southern regions, especially Yirgacheffe and Sidamo, such as the floral notes and citric acidity. Limu itself is most known for having a fuller body than the other two regions presenting a real tasty balance.

The area is famous for its forests and abundant supply of water. These forests create the perfect conditions for the organic matter like fallen leaves and dead trees to compost and return their nutrients to the soil. This cycle of dirt returning to dirt means rich soils that keep coffee trees well fed.  Most farms in Limu are semi-forest systems, typically under 1 hectare. Farmers selectively handpick cherry and most deliver their cherry to Telila washing station.

At intake, cherry is floated to remove under-ripes and visually inspected for any damaged cherry. Cherry is then pulped and fermented after which the parchment is washed in clean water and moved to raised beds to dry. At the beds, workers pick over drying parchment to remove any damaged or defective parchment. Drying parchment is turned regularly to ensure even drying.  Parchment typically takes about 10 days to dry.

We think you’ll love this as a filter coffee tasting the sparkling stone fruits like Peach Lemonade or Ice Tea. There is the hint of White Wine tannins and has a lingering sweetness like Butterscotch

We paid 149% over the commodity price of coffee to our importer for this bag. These importers pay a premium to farmers based on the quality they produce and are not driven by market prices.

We roasted on Monday & Thursday's.

WHEN DO YOU SHIP?

Orders before Monday 12pm shipped Monday.

ROAST TYPE

We currently roast for both Filter and Espresso, easily identified by the subsequent Yellow and Black bags. It's important to note that we are always roasting for sweetness, clarity, and body, searching for these things during our quality control sessions on Wednesdays. 

Whilst you should get good results using our Filter roasts as Espresso, and vice versa, the profiles that were chosen for each are done so with solubility in mind.

HOW SHOULD I DRINK IT?

We encourage you to develop your own recipe as variables change based on water quality and how fresh your coffee is. Our go-to starting point for this coffee is as follows:

Rest for at least 4-days. 1:16 Ratio (20g Coffee / 320g Water) in 3/4 minutes.
