Yaxcum - Guatemala

Sale price£13.00
We are so thrilled to bring another all-woman produced Guatemalan coffee, sourced from Primavera Green Coffee. We've worked closely alongside Primavera Green Coffee for a while now while sourcing Guatemalan coffees. Primavera and Primavera Sisterhood are two other washed Guatemalans that we've offered this year, and there's a reason we keep coming back.
We were pleasantly surprised while cupping this coffee, we noticed a nice, gentle acidity, and notes of chocolate biscuits, apples, and pomegranate, reminding us of a Ferrero Rocher and an Apple Tart, the perfect Autumnal coffee. This is one of those coffees you could drink all day long, a real crowd-pleaser.

Every Coffee Has A Story

Discover More | Yaxcum - Guatemala

This coffee was produced by Maria Escobar Gaspar, a 2nd generation coffee grower, lives with her family in Concepcion Huista and is meticulous in every aspect of coffee production. Her dad had to leave the small town for work, and she and her family took the reins of the farm, planting coffee. Now that her dad has returned, he assists with the farms' coffee production.

Maria is a part of Jovemcafe, a 25 woman group in Com, supported by Primavera and The Chain Collaborative. Through Community-Led Development Incubator, they've started a henhouse and tree nursery, selling eggs and plants in the local community. Maria processes coffee on the farm, then transports it to their home to ferment, wash and dry it. "The land is still Dad's, I manage the whole coffee process, from harvesting to milling, done at home. The challenge is that the farms are an hour away, so moving the coffee can be tough."

Red Coffee

What Does Our Colour System Mean?

We categorise each coffee into a colour system that identifies the 'vibe' and general tasting notes of that category of coffee. It can also have a relation to what brewing method works best, the processes used to create it or the varietal of the actual bean. Watch the video below to hear from a member of the team on what exactly this colour represents.
