Coffee Origin:

Cerrado, Brazil

Brazil Cerrado coffee is a popular single-origin coffee known for its well-balanced flavor, smooth texture, and nutty, chocolatey undertones. This region is known for its ideal conditions for coffee cultivation, including high relief, adequate sunshine, and fertile soil.

Coffee Process:

Natural, Induced Natural Fermentation

The natural process usually involves drying coffee cherries either on patios or raised drying beds in the sun. The cherries are spread out in a thin layer and raked and turned throughout the day to prevent spoiling. Then covered at night or during rainstorms to prevent an increase in moisture content.

The process can take 3-6 weeks. Once dried the outer layer and dried fruit are removed mechanically and then stored before export.

If there is very little access to water this is the most common form of processing. It is common to find naturally processed coffees in places like Ethiopia and Brazil.

CARPEC is a co-operative based in Carmo de Paranaiba (hometown of our very own Fernando Quieroz!). It was founded in 1965 as a co-op for members representing a range of agricultural businesses, and they added coffee production to their activities in 1989. They opened their dedicated coffee warehouse and processing facility in 2019, where they have capacity to store 300,000 bags and process coffees purchased from their members on state-of-the-art milling equipment. It is at this facility that our time with CARPEC and their coffee team began.
