We're thrilled to have this experimental process from the Sironko Station Nanolot in Uganda, sourced by our friends at Langdon Coffee Merchants. This coffee was produced by Mountain harvest who are commitment to long-term economic and environmental sustainability for the producers they work with.
We're excited to highlight this experimental process, showing innovation happening at origin. We were blown away by this coffee on the cupping table, and can't wait for you to try it! You can expect tasting notes of Cherry Bakewell, Blackcurrant, Wild Honey.

Coffee Origin:

Mount Elgon, Uganda

Sironko Station is a centralized wet mill managed by Mountain Harvest at the base of Mt Elgon. Operating as a hub for innovation and research, this station is used to process cherries bought from a handful of communities in the area, which is an unusual practice in Uganda where the vast majority of coffee is processed down to parchment at the farm level. Form research in previous seasons, Mountain Harvest takes advantage of having full variable control during processing, in order to produce Honey and Natural processed microlots, as well as experimental processed nanolots.

Coffee Process:

Honey Anaerobic

Part of Mountain Harvest's "Innovation" series, an experimental lot employing an anaerobic fermentation. Cherries with a board score of at least 80% (used for checking consistency of ripeness) and a BRIX reading of 17% (used for measuring concentration of sugars) are sealed in plastic barrels for 48 hours. After fermenting anaerobically, cherries are pulped, spread on racks to open dry for 3-5 days, and then solar dried for 25 days.
