As a distinctive feature, coffee growing in Nariño is based on family smallholdings: each coffee-growing family owns an average of 0.92 hectares of coffee. This characteristic means that the approximately 33,000 coffee-growing families operate on small farms, which facilitates artisanal care and is key to quality. In terms of volume, this model places Nariño as the ninth-largest producing department in Colombia, but its prestige is due to the excellence of its beans.

This coffee is decaffeinated using Ethyl acetate (EA), a natural component of sugar cane, coffee, and fruits such as strawberries and bananas. It is highly selective with respect to caffeine and can physically extract it from green coffee beans in a gentle, but targeted manner.
